This is easy.
* 1 cup Bulgar wheat * 2 cups Boiling water * 2 Tomatoes -- finely diced * 1 bunch Green onions -- sliced * 3 tablespoons Fresh mint -- chopped * 2 cups Fresh parsley -- chopped * 1/2 cup Fresh lemon juice * 1/4 cup Olive oil * Black pepper to taste Place uncooked bulgar in a bowl; pour in water over it and let it soak one hour (stir occasionally) Drain well in a fine strainer. Return bulgar to the bowl and add all other ingredients; mix well. Chill for 2 hours. |

ngredients:
2 cups dry bulgur 2 cups boiling water parsley chopped fine, about 1/2-3/4 cup lettuce chopped small, about 1 fluffy cup fresh tomato, about 3, cut up in small pieces cucumber, cut into small pieces, about 1/2-3/4 cup mint, optional. Some people like this. dressing: olive oil, good quality, 1/2 cup lemon juice 2/3 cup salt to taste Directions: Combine boiling water and bulgur, cover and let grain soak up the water. Using this combination it will come out just right...no extra water. Add cut up salad ingredients. Then add dressing, and mix. Chill all together |
