Default Honey-Glazed Gingerbread Muffins

I love ginger stuff -- gingerbread cookies, soft gingerbread with a lemon sauce. Ginger anything. Love the smell when it's baking, too.

These are SO good. Enjoy


"All the good gingerbread flavor in a moist, tender muffin. These are
honey-glazed during baking, making them extra good!"

For 1 dozen muffins you will need:

Honey-Butter:

3 Tbsp. soft butter or margarine
4 1/2 Tbsp. brown sugar
4 1/2 Tbsp. granulated sugar
1 Tbsp. honey
2 tsp. water

Muffin Batter:

5 Tbsp. butter or margarine,
melted
1/4 cup brown sugar
1/4 cup granulated sugar
1/4 cup molasses
2 eggs, beaten
3/4 cup buttermilk
1 3/4 cups all-purpose flour
1/2 tsp. baking soda
1 tsp. baking powder
1 tsp. genger
1 tsp. cinnamon
1 tsp. nutmeg

Preparation:

1. For the honey-butter, cream together the butter and sugars until
fluffy. Blend in the honey and water. Beat until fluffy.
2. Coat 12 muffin tin with mixture.
3. For the muffin batter, in a bowl, combine the melted butter,
sugars, molasses, eggs and buttermilk.
4. In another bowl, combine the flour, baking soda, baking powder,
ginger, cinnamon and nutmeg.
5. Add liquid ingredients to dry mixture. Stir only until dry
ingredients are moistened.
6. Spoon into prepared muffin tin.
7. Bake at 400 degrees F for 14 to 18 minutes.
8. Let sit a minute or two. Then remove from tin. Serve immediately.
