Ingredients:
Crust: 2 cups all-purpose flour 1 cup quick cooking oats 3/4 cup brown sugar, firmly packed 1/2 cup corn or canola oil Filling: 1 1/4 cup fat-free sweetened condensed milk 1 cup ricotta cheese, part skim 1/2 tsp. liquid egg substitute 1/2 tsp. vanilla extract 2 tbsps. all-purpose flour 2 tbsps. cornstarch 1 1/2 cups whole cranberry sauce Directions: * Preheat oven to 350ºF. * In a large bowl, combine flour, oats and sugar. * Add oil and mix crumbly. * Press 1/2 of the mixture on the bottom of a 9x13x2 pan. * Bake 5 to 8 mins. until set. Cool. * In a separate mixing bowl, combine condensed milk, ricotta cheese, egg substitute and vanilla. Stir to mix. * Gradually add flour and mix well. * Pour cheese mixture evenly on cooled crust. * In a small bowl, combine cornstarch and cranberry sauce. * Spoon sauce over cheese mixture. * Sprinkle remaining crumb mixture evenly over sauce. * Bake 30-35 mins. or until set. |
