My kids used to love making these when they were little!

Ingredients:

5 tbls. shortening
1 C water
1 C flour
1/2 tsp. salt
4 eggs


Directions:

Preheat oven to 450 degrees.

Bring shortening and water to the boil. Quickly add flour and salt. Stir until mixture leaves sides of pan and remove from heat. Cool slightly. Add eggs one at a time, stirring after each egg is added. Drop by spoonsful on greased baking sheet. Bake in hot oven for 20 minutes. Reduce oven temperature to 325 degrees and continue baking for 25 minutes. When puffs are cooled, cut slice from top of puffs and hallow each out. Fill inside of puffs with custard filling.


Custard Filling:

Ingredients:

2 C milk
2 eggs
2 heaping tbls. flour
1/2 tsp. salt (optional)
1 tsp. vanilla
1 tbls. butter


Directions:

Bring milk to boil and set aside. Beat eggs until light and add sugar, flour, salt, vanilla and butter. Add to milk and cook until thick, stirring constantly. If this isn't thick enough, mix a little more flour with a little milk and add to mixture.

Fill puffs with custard and let cool, returning cut-off tops to puffs. These are yummy!! :D
