1 red bell pepper, diced 
1/2 yellow onion, diced 
2 celery stalks, diced 
1 T olive oil 
1 tsp salt 
1 tsp black pepper 
2 1/2 lbs ground beef/turkey/pork/whatever 
2 cans kidney beans, drained and washed 
1 can diced tomatoes, drained</description>

16-24 oz tomato sauce (depending on how saucy you like your chili)<br />
1 package of chili seasoning or 6 T of your favorite chili spice blend (I use Tastefully Simple Wahoo Chili seasoning)<br />
Additional salt/pepper, if desired<br />

Directions:<br />
1. Heat a large soup pot over medium-high heat, add olive oil, red pepper, onion, celery, salt, and black pepper. Saute until translucent. Remove from pot and place into another bowl.<br />
2. Add ground meat to hot soup pot and brown. Drain off fat, if desired.<br />
3. Add sauteed veggies to ground meat, add kidney beans, tomatoes, and tomato sauce. Stir until blended.<br />
4. Blend in chili seasoning, reduce heat to medium-low, cover, and simmer for 1-2 hours.</div>

Place all ingredients except noodles in the Crock Pot. Cover and cook on low for 5 to 6 hours. Remove chicken and bay leaf from pot; take meat from bones, dice, and return to broth, and add the noodles. Cook another hour or until noodles are done (about 1/2 hour on high). Or, if you prefer a completely clear soup, cook the noodles separately and add them just before serving</div>

In converting this to low sodium I have omited the bread and cheese that it was served with but have retained the flour.  My question is what makes French onion soup &quot;French&quot;?  Is it the flour or the bread and cheese that make it considered French.  I don't know if I should refer to my soup as French onion or just onion soup.  Which is it?  BTW I've added a whole lot of fresh thyme to mine.  If anyone is interested in a low sodium onion (or French onion) soup with lots of flavor and very little sodium, let me know and I will post it.</div>
