For Christmas, I always make the Peanut Butter Blossom cookies as gifts to give and I have several to give. I usually use the store bought peanut butter cookie dough in the roll, but in order to save money I am going to make my own. In the past when I try and make these the cookie dough is always dry and crumbles when I put the chocolate kisses in. Any suggestions on how to make these so they won't crumble. Thanks :)

Nanaimo bars are Canadian favorite and mine too. This non-traditional no bake recipe is a liberal version of the first one that, according to a reliable source, was printed in the 1952 Nanaimo Hospital Cookbook.

Granulated sugar ¼ cup
Unsweetened cocoa powder 5 Tbsp
Unsalted butter, softened 1 cup + 2 Tbsp
Egg, beaten 1 large
Graham cracker crumbs 1¼ cups
Pecans, walnuts, almonds, finely chopped ½ cup
Sweetened coconut flakes 1 cup
Milk 2½ Tbsp
Vanilla instant pudding or pie filling powder 2 Tbsp
Confectioners’ sugar 1 cup
semisweet baking chocolate 4 oz

•Preheat oven to 400 degrees Fahrenheit and line cookie sheets with parchment paper.

•Lightly spray an 8x8x2-inch baking pan with non stick cooking spray. Set aside.

•Combine granulated sugar, cocoa powder, and ½ cup softened butter in a glass or aluminum bowl and set it over a pot of simmering water. Make sure that the water level does not reach the bottom of bowl. Stir and cook until all is melted and well blended together.

•Add beaten egg. Continue to stir and cook for another minute or so before removing the bowl from heat.

•Stir in graham cracker crumbs, chopped nuts, and coconut flakes.

•Press mixture firmly into prepared pan. I used my fingers while wearing Latex gloves. Refrigerate for at least an hour.

•Beat milk, pudding or pie filling powder, confectioners' sugar, and ½ cup softened butter at low speed until light and well blended. Then spread the mixture over chilled base and refrigerate again for another 30 minutes.

•Melt semisweet chocolate squares and the remaining softened butter over low heat. Remove from heat and cool 5 minutes before spreading it over chilled bars. Refrigerate again for 30 minutes before cutting.

•Store Nanaimo bars in a covered container between layers of wax paper in the refrigerator.

Bugnes Arlesiennes

Ingredients for fried cookies:

All purpose flour 1 and 1/2 cups
Granulated sugar 1/4 cup
White rum 1/4 cup
Egg 1 large
A pinch of salt
Vegetable oil for frying about 4 cups
Confectioners' sugar for dusting

•Line a cookie sheet with parchment paper to hold the bugnes before frying them. Line another cookie sheet with paper towel on which to drain the fried bugnes.

•Whisk egg, granulated sugar, and salt until light in color and fluffy.

•Mix in white rum.

•Stir in flour using a spatula. When a soft dough forms, turn it out onto a floured surface and knead until dough is smooth.

To knead dough, fold it over on itself, then firmly push it away from you with the heel of your palm. Keep repeating these steps.

• When dough is smooth, roll it out to about 1/2 inch thick and wrap it in plastic.

•Allow the wrapped dough to rest for an hour at room temperature before continuing.

• Roll dough out and cut into 3-inch squares approximately. As each piece is cut, place it on the parchment-lined cookie sheet.

It helps to work with just 1/3 of the dough at a time.

•Fry two or three pieces of cut out dough at a time in a large pan, such as a Dutch oven. Constantly turn them over so they color evenly. Remove them when they are light golden brown, and drain on paper towel.

•Cool to room temperature.

•Dust generously with confectioners' sugar before serving.

Bugnes Arlesiennes are best the day they are made. Do try other recipes for fried cookies.

Armenian Sesame Cookies

All purpose flour 3 and 1/3 cups
Baking powder 1½ tsp
Salt ½ tsp
Unsalted butter, melted 1 cup or 2 sticks
Milk ½ cup
Sugar ½ cup
Egg 3 large
Sesame seeds 1 cup

•Preheat oven to 325 degrees Fahrenheit, and line cookie sheets with parchment paper.

•Combine flour, baking powder, salt together and set aside.

•Whisk together melted butter and milk in a large bowl, then add sugar and continue whisking until the sugar is mostly dissolved.

•Add one egg and whisk again thoroughly.

•Gently stir in the flour mixture to make a soft dough.

•On a lightly floured surface, divide dough into 36 pieces of approximately equal weight. Roll each piece of dough into a 4 or 5-inch strand. Connect the ends to make a circle and set aside. Finish shaping all the cookies.

•Place a couple of tablespoons of sesame seeds in a shallow dish.

•Beat two eggs well to form an egg wash. Paint each cookie with egg wash and gently press its top into the dish of sesame seeds.

•Arrange cookies, seeded side up, on prepared baking sheets, spacing about an inch apart. Adding a little sesame seeds to the dish at a time to keep them from getting all sticky from the egg wash.

•Bake sesame cookies for about 30 minutes or until they are golden and dry. Cool cookies on baking pan on wire racks. Store them in airtight containers to preserve their crisp texture
