Cool Ground Flax Seed

I just read you can use Ground Flax Seed for a egg replacement..
1 Tablespoon of ground flax seeds plus 3 tablespoon of water for 1 whole egg

I find that to be wierd! My goodness can you imagine an egg-less custard?!? E-w-w-w

I've seen this mostly in bread recipes. Alot of gluten free bread recipes use it as a binder and to add extra nutrition.
