Default Corn dogs

1/4 cup brown rice flour
1/4 cup potato starch
1/4 cup tapioca flour
1/8 cup corn flour
1/8 cup sweet white rice flour
1/2 tsp xanthan gum
1 1/2 tsp egg replacer
1 1/2 tsp baking powder
1/4 tsp salt
3 tsp sugar
1/2 to 3/4 cup milk (rice, soy, or cow)
Hotdogs on a stick, little wieners, or vegetarian subsitute
oil for frying

Fill oil about 2" deep in a 2-quart pot. Preheat oil to 360'F using frying thermometer. Leave the thermometer in place during cooking.

Combine dry ingrediants in a bowl. Add just enough milk to make smoothbut thick batter. Dip hotdogs on a stick, little wieners, or vegetarian subsitute into batter, completetly coating entire surface. Carefully drop into hot oil. Cook until deep golden brown, about 1 minute. Remove from oil and drain on paper towel.

Caution: Be sure that any meat product is free of unwanted ingrediants. Many processed meats contain dairy, wheat, gluten, or soy products.
