Hi, All,
My daughter is on the SCD (Specific Carbohydrate Diet) because she can't tolerate complex carbs or products w/ gluten. It's a challenge when you have to embark on an entirely different way of eating. I cook for us, plus for her so she always has things to grab and won't diverge. "The Grain-Free Gourmet" by Jodi Bager and Jenny Lass is by far the best cookbook for grain-free recipes I've come across. There are so many items in it that our entire family enjoys. For baked goods, almond flour is used. This seems to be a staple with the low carb diet folks these days too. You may want to check this out if you or any family member must follow these restrictions.
