Default Need Recipe for potato salad

I need a recipe for potato salad that has extra ingredients. My husband had a sister-in-law that used to make a potato salad that had black olives, cheese, bacon, green onions, and cut up potatos. Does anyone have a similar recipe?

not sure if this is what you are looking for:

Baked potato salad

Butter as needed
8 small to medium potatoes, cooked, peeled and diced
1 pound Velveeta, diced
1 cup mayonnaise
3 strips cooked bacon, drained well on paper towels and crumbled
½ cup chopped onion, or to taste
4 teaspoons instant chicken bouillon granules
3 hard-boiled eggs, diced

Spread a thin layer of butter inside a 9-by-13-inch baking dish. In a large bowl, mix together potatoes, Velveeta, mayonnaise, bacon, onion, chicken bouillon and hard-boiled eggs. Place in baking dish. Cover tightly with foil and refrigerate overnight.

Heat oven to 325 degrees. Bake 75 minutes, or until done. Can be served warm or cold.

Serves 8 to 12.



Bacon Ranch Potato Salad - microwave or stove top

Makes about 8 cups

NOTE: You do not have to use your microwave to make this.

3 pounds new potatoes (cut into 1/4-inch slices)
1/3 cup cold water
1/2 cup Miracle Whip salad dressing
1/4 cup ranch flavored dressing
1/4 tsp salt
1/4 tsp pepper
1/8 tsp garlic powder
6 slices bacon (cooked crisp and crumbled)
1/2 cup celery slices
1/2 cup red pepper strips
1/2 cup sliced green onions

Place potatoes and water in 3-quart microwave dish and cover. Microwave on high for 14 to 16 minutes or until tender, stirring after 8 minutes; drain.

If not using your microwave - boil potatoes until done; drain.

Mix dressings and seasonings in large bowl until well blended. Add potatoes and remaining ingredients; mix well.

Refrigerate for at least 30 minutes before serving.


and you can always add cheese, olives, etc. to your favorite recipe

I always add cheese because it makes the potato salad tastier. Also, I add cooked ham.

I am going to try the bacon ranch one, it sounds really good!

I have never tried it that way. I just use potatoes , mayo, mustard , salt and pepper, pickles relish ,and eggs. It sounds good.
