some cheese will crumble really bad - some will get very salty and depending on what kind you are freezing will depend on if you need to thaw it first.
Regular chunk cheese, usually cheddar, Monterrey Jack, mozzarella, the kind that comes in unshredded.
Chunk cheese will freeze - I wrap in plastic and place in a plastic bag. It does not last forever! But it is nice to freeze for a short period of time. Make sure there is no moisture in the package.
I've never heard of freezing cheese. What kinds actually do well in the freezer?

the "harder" cheeses as loubear described do better than the over processed slices and softer cheeses
they don't last long - but if there is a good sale on chunk cheese - you can freeze for a bit -

I didn't know that you weere able to freeze cheese. About how long should it be in the freezer before it goes bad. We go thru alot of cheese in the house so this might be profitable to purchase a few blocks when they are on sale.
I have kept cheese in the freezer a few months at least. It's definitely a good idea to buy it on sale and freeze it. The higher in fat a food is, the better it will freeze. And we all know how much fat cheese has in it!
