    Slow Cooker Corn Chowder

    * 2 cans (16 oz) whole kernel corn, drained
    * 2 to 3 medium potatoes, chopped
    * 1 onion, chopped
    * 1/2 teaspoon salt
    * pepper to taste
    * 2 cups chicken broth
    * 2 cups whole milk or half-and-half
    * 1/4 cup butter or margarine

    Combine first 6 ingredients in slow cooker. Cover and cook on low for 7 to 9 hours. Puree in a blender or food processor, if desired, then return to pot. Stir in milk and butter; cover and cook on HIGH about 30 to 60 minutes longer.

    Serves 6 to 8.

    Mama, That recipe sounds really good. I love corn chowder but have never made it. I will have to try your recipe.

    What a simple recipe? I never thought it could be that simple. Do you ever tweak it and add any meat to it? Not traditional in corn chowder, I know.

    I often make a similar recipe to this with smoked chicken.

    Just take 2-3 chicken breasts and marinate them in liquid smoke for about 30 minutes, then grill (or saute or whatever) till brown, and cut in bite size pieces. YUM.
