Does anyone have a really nice and creamy recipe for Flan? My husband loves this when we got to Mexican resturants to eat. we have purchased a few different types of the box pudding type but they are not as good.

PUERTO RICAN STYLE CREAM CHEESE FLAN:

- 3/4 cup sugar
- 1-8 oz. softened cream cheese
- 8 eggs
- 1 can condensed milk
- 1 can evaporated milk
- 1 tsp vanilla

In mold or pot, place 3 Tbs sugar & 2 Tbs water, mix well. Cook on
medium heat till sugar turns amber. Beat all ingredients together.
Carefully pour into prepared pan & bake at 350F, in bain marie for 50
minutes, or till golden.


Cream Cheese Flan

3 whole eggs
3 egg whites
2 ounces of cream cheese
1 can of evaporated milk
1 can of condensed milk
1 Teaspoon of vanilla
3/4 cup of sugar

Take the sugar and caramelize it in a small sauce pan. Do not let the sugar burn. It should be a golden caramel color. Pour this caramel into an 8" round dish. Make sure to coat the bottom and the sides of the pan.
Place all other ingredients in a blender and mix till it has a smooth consistency. Pour into the pan filled with caramel. Place pan in bane marie - a is a larger pan that has an been filled with an inch of water. This will help cook the flan. Place the larger pan with flan pan in it in the oven at 350 degrees. (25-30 minutes)
You can check the flan by poking it center with a knife. If the knife comes out clean then the flan is done.
