Hi EricW and welcome! Spice Place is a warm, fantastic, tight-knit foodie community that many of us truly enjoy. Welcome to the family!

Here's another easy, efective way to freeze zukes... Make them into Italian-Breaded Appetizer Stix for deep-frying! THEY'RE ABSOLUTELY YUMMY!

Cut into about the same size you would carrot stix. Rise them w/ cold water (must be wet) then dip into flour that's been seasoned liberally w/ S&P and garlic powder, then egg wash, then a mix of dry bread-crumbs and parmesan cheese, seasoned quite heavily w/ your preferred Italian blend. Place on a lined cookie sheet in a single layer and freeze completely. When frozen hard, may be removed from lined pan and placed into a large zip-lock bag.

When ready to cook them drop frozen into 350 degree deep fryer of your favorite oil (I like peanut oil) and fry until golden. Sprinkle w/ more parmesan cheese while still HOT and eat'em up!
