I will have to try that soda idea. Seems I never have buttermilk handy when I want pancakes. Of course, I can make it using vinegar or lemon juice, but that's never quite the same.

I love pancakes. Luckily I don't have the time to make them every morning, or i would be as big as a house.

I can't seem to make good pancakes. When I was in college, the recipe we used for pancakes there was just fabulous (I worked in the dorm cafeteria and often cooked). I took the recipe when I left, but I've since lost it. Boo.

Don't overmix the batter. Works for me. The Club Soda and buttermilk are excellent to incorporate too. Overmixing renders those puppies rubbery! There should be some lumps in the batter. Not a lot, but a few small ones.

how about this one??

McDonald's Hotcakes


2/3 cup 7 Up
1 egg
1 tablespoon sugar
1 tablespoon oil
1 1/2 cups Bisquick baking mix

Put all ingredients into blender on high speed for a few seconds until
smooth. Let stand 10 minutes before using 1/4 cup batter for each pancake on hot, oiled griddle, browning each side.

Wow, how did you get the recipe for McDonald's hotcakes? I so love them. Is there any other way to smoothen the all the ingredients without using the a blender? Maybe just a fork? I use fork in beating the eggs.

Sure - but remember - by using a blender they are incorporating more air which helps to make them lighter. Try your hand mixer.

Regarding beating your eggs with a fork - try a blender or hand mixer - good volume!

Thanks for these tips. My pancakes do not come out fluffy either. I have a friend who cooked them and hers were so fluffy. I probably am over mixing mine. I will try the soda too. thanks

Are you serious? 7-up in pancakes. Why I never!!!!! But I will...heheee Does that work for the mixes as well? Instead of milk/water just use 7-up?
