Default Fluffy Pancakes ?

I have made pancakes with 4-5 different recipes, and they always turn out gummy, rubbery, and spongey. I follow all the instructions and it's always the same. I tried different fats, different pans, different leaveners, etc. The only one that's decent is pancake mix! Please help, my husband says pancakes are my Achilles heel. I can flambe a crepe with the best of them, but I can't get regular old pancakes right.

Do you use buttermilk? I find that's the key to pancakes for me.

The best pancakes that we have made in household were Sourdough pancakes. They taste great and are the fluffy and light. I will pull out the recipe and post it for you.

A friend of mine had that problem - now they use club soda in place of the liquid called for in the recipe! I haven't tried it - but as soon as I get club soda I am going to!

Hey, what a great idea. I have some club soda lying around that I bought for some unknown reason. This would be a great way to use it.

I'll report back if it's any good.

Guess what?? Soda drinks like 7-UP and Sprite are used as well. After all - both sodas are used in making biscuits as well!

WOW....I have never heard of anyone using soda in pancakes or biscuits. I will have to keep that in mind.

BAGCSC - didn't you ever hear of this one??


McDonalds Biscuits


1/4 cup 7-Up
1/4 cup Buttermilk
2 cups Bisquick

Mix together 7-up, buttermilk, bisquick to smooth dough. Dip hand in
just enough more bisquick you can knead dough in bowl till smooth and
elastic. Shape dough into 6 patties of equal size, 1" thick & place 1
patty in center of a greased 9" round layer pan. Arrange the other
patties around that. Wipe tops of each in a dab of margarine or margarine.
Bake at 450F-(very hot oven) 18-20 minutes or till triple in size & golden
bown. Cool in pan 10 minutes before serving. Makes 6 McFabulous flaky
biscuits.



how about this one??

McDonald's Hotcakes


2/3 cup 7 Up
1 egg
1 tablespoon sugar
1 tablespoon oil
1 1/2 cups Bisquick baking mix

Put all ingredients into blender on high speed for a few seconds until
smooth. Let stand 10 minutes before using 1/4 cup batter for each pancake on hot, oiled griddle, browning each side.

I like those recipes especially the Hot cakes one. I just looove McDonald's hotcakes.
