Hello - thank you in advance for any replies or ideas.
I understand I must not salt beans until they are cooked .. but if I saute onions and garlic and salt them before I add the beans & water, will that salt mess with the beans? I should have asked this before I began cooking .. so if I find out this evening when serving the beans I will post here.

the good thing about salt - it can always be added
but wait until your beans are cooked first - before adding

Mama, just give you some very good advice. I might add that if you are using any kind of cured meat for seasoning. It will have some salt. . CF:)

That goes double if you are using a salt substitute. Substitutes are almost always Potassium Chloride and potassium dispurses with water so add them at the very end are even at the table before eating. Must cooks are going to ban me for that last statement.
