I just joined today, my boyfriend said that I need something to do, lol. I love to cook and I love to try new things. A majority of my cooking is in Authentic Mexican food, but I love to learn all types of cooking and I am looking forward to learning new things and meeting new people.

I would have to say my favorite dishes are enchiladas and barbacoa tacos, of course with your side of rice and beans, lol. I dont cook as much mexican food as I used to, it has taken me a few years to get my boyfriend use to it. Other than that I don't really have too many favorites, I just love to try new things! New anything.

I bought a bag of corn tortillas about 6 months ago they sell them in bags of 100. The freeze really well luckily but you have no idea how many enchilladas, tacos, fajitas, quesadillas etc it took to get through them all! I just finished them last week wheew! I also really like to make homemade tamales have you ever made them?

next time you have a couple of corn tortillas thawed, cut them into squares. Cook some chopped onions in a bit of oil till soft, toss in tortilla pieces. when they start to get a bit crispy toss in several scrambled eggs.
stir till eggs are done, top with a bit of pepper jack and you have yourself-ta da- Migas. a favorite breakfast treat with almost all the crews I had served--including the roughnecks on the drill rig in the Gulf who grew up on it in Mexico.

Oh yeah, I am actually going over to my mom's house tomorrow to help her make homemade tamales! We only used to make then a couple times a year, because our family is so big and tamales are so time consuming. Now my mom sells then buy the dozen, because it was costing her so much to make them and people would take a bunch home, lol. Now we make them all the time, and it does not get any easier!
