Default what to do with melted ice-cream

I'm new to the forum and haven't much experience with cooking other than the basics for survival. I've been considering joining a forum, no that I'm retired, to improve my culinary skills. This seem the best time to do it. I just returned from a few days at the cottage to find the freezer door partially open, and much of the contents thawed, some of it not even cold. We are cooking much of it and throwing much of it out. We do have a gallon or 2 of melted but cold ice-cream in several flavors. My wife wants to throw it out but I thought I would see if anyone has a suggestion for using it. Help please...?

Made with cream or any dairy product should be thrown out if it has been thawed for a long while.

Well I am in agreement with CanMan. The only exception would be if it were just melted (like in the last couple of hours) I would make some jello gelatin (any flavor) and I would add some of the melted vanilla ice cream to it, then when you refrigerate it and it sets up you will have some exceptional layered jello that tastes out of this world!

don't re-freeze it - but you can make tons of milkshakes and there are recipes using melted ice cream - depending on the flavors of course -

it can be used as a "sauce" for cakes, fruits, fruit topped poundcakes, etc.

    Ice Cream Rolls

    3 (7 1/2 ounce) packages refrigerated biscuits

    1/2 cup melted butter
    1/2 cup sugar

1 cup vanilla ice cream, melted
    1/2 teaspoon ground cinnamon (optional)
    1/2-1 cup raisins (optional)

    Directions
    1Spray 13 x 9 pan with cooking spray.
    2Preheat oven to 350 degrees.
    3Cut biscuits in half.
4Place in pan in 1 layer.
    5Pour butter evenly over biscuits.
6Sprinkle sugars evenly over biscuits and butter.
    7Pour ice cream evenly.
    8Bake for 30 minutes.
    9Cool slightly.
10Turn pan over onto serving platter.

    DIRECTIONS
    Preheat oven to 350 degrees F (175 degrees C).
Pour the ice cream into a large bowl; fold the flour into the ice cream until the dough just begins to come together. Using your hands, gently knead the dough into a ball, adding flour as necessary to keep the dough from sticking.
Turn the dough out onto a lightly floured surface and roll into a 9x13 inch rectangle. Cut the dough into 12 circles, 3 inches in diameter, and place on a baking sheet.
Bake in the preheated oven until golden brown and cooked through, 15 to 20 minutes.
