    Hi My name is Susan and I stumbled upon this web site looking for low sodium recipes for my mother who had a stroke earlier this year, so forgive me if I am asking my question in the wrong place.

    My family has always had a processed ham for Christmas dinner and because of my mom's stroke this is out of the question. What my husband is going to do is smoke a ham cut of pork (using no salt). My dilemina is I need a gravy to serve with Christmas dinner and because the smoking process makes any broth undesirable I need to come up with a flavorable gravy for a some what picky family. I have thought about using the ham base available in the stores but their is 680mg of salt per one cup of broth. Does anyone have any suggestions?

    Any thoughts, suggestions or advise will be greatly appreciated.

    Brown Gravy Mix

    Yes, it says instant coffee. Don't be afraid, it doesn't really make it taste all that weird. And it certainly does give it that nice brown color.

    1 2/3 c Cornstarch
    6 T Low Sodium Beef Bouillon
    4 t Instant Coffee Crystals
    2 t Onion Powder
    1 t Garlic Powder
    1/2 t Black Pepper
    1/2 t Paprika



    Combine all ingredients and store in an airtight container. To make gravy, measure 3 tablespoons mix into a saucepan. Add 1 1/2 cups water. Bring to a boil and simmer 1 minute.

    Yield: 24 Servings

    Low Sodium Gravy
    2-2/3 cups water
    1/4 cup Low Sodium soy or tamari sauce
    Water for saute
    2 large yellow onions, thinly sliced
    1/4 cup all-purpose flour
    1/4 cup nutritional yeast
    1-1/2 teaspoons ground sage or 2 teaspoons rubbed sage
    1/2 scant teaspoon white pepper
    1 generous tablespoon onion powder
    pinch of dry mustard (optional)

    Low Sodium Gravy
    Step 1:
    Combine water and soy sauce; set aside.

    Step 2:
    Saute sliced onions until translucent, approximately 3 minutes. Reduce heat to medium-low and add remaining ingredients. Cook for 5 minutes, stirring often. Increase heat enough to maintain simmer while gradually adding soy sauce mixture. Stir continuously over heat until gravy thickens, approximately 5 minutes.

    Pineapple Sauce for Ham

    3 tablespoons cornstarch
    3 tablespoons brown sugar
    1 tablespoon soy sauce - low sodium
    1/3 cup vinegar
    1 (6 ounce) can pineapple juice

    1.In a medium saucepan, mix together cornstarch and brown sugar. Stir in soy sauce, vinegar, pineapple juice and raisins. Cook over medium heat, stirring constantly, for 10 to 15 minutes or until sauce has thickened.

    Simple Pineapple Sauce for Ham

    2 (8 ounce) cans crushed pineapple, in juice (do not drain)
    1 cup brown sugar, packed
    1 tablespoon cornstarch
    1/4 teaspoon salt
    2 tablespoons lemon juice
    1/2-1 tablespoon Dijon mustard (start with less and adjust to your taste)
    Change Measurements: US | Metric

    Directions:Prep Time: 5 mins
    Total Time: 20 mins
    1 In a small sauce pan mix the brown sugar, cornstarch and salt. 2 Stir in undrained crushed pineapple, lemon juice and mustard. 3 Cook over medium heat, stirring constantly until mixture thickens and comes to a boil. 4 Boil while stirring for 1 minute. 5 Serve warm with ham.

    No Roux White Sauce

    1 tablespoon cornflour
    1/2 pint 1% low-fat milk or fat-free

    Directions:Prep Time: 5 mins
    Total Time: 10 mins
    1 Mix a little of the milk with the cornflour to form a smooth paste and mix into the rest of the milk. 2 Heat in a saucepan on a medium heat, stirring constantly until thickened.


    variations - Add cheese or stock cubes depending on the recipe. Adding a spoon of honey makes for a lovely sweet sauce.

    Basic White Sauce/Roux

    Thin White Sauce
    1 tablespoon butter or 1 tablespoon margarine
    1/2-1 tablespoon flour
    1/4 teaspoon salt
    1/8 teaspoon pepper
    1 cup milk


    Medium White Sauce
    2 tablespoons butter (optional) or 2 tablespoons margarine (optional)
    2 tablespoons flour (optional)
    1/4 teaspoon salt (optional)
    1/8 teaspoon pepper (optional)
    1 cup milk (optional)


    Thick White Sauce
    1/4 cup butter (optional) or 1/4 cup margarine (optional)
    1/4 cup flour (optional)
    1/4 teaspoon salt (optional)
    1/8 teaspoon pepper (optional)
    1 cup milk (optional)

    Directions:Prep Time: 5 mins
    Total Time: 15 mins
    1 Melt butter in saucepan over low heat. 2 Blend in flour,salt,pepper. 3 Cook over low heat,stirring until mixture is smooth and bubbly. 4 Remove from heat. 5 Stir in milk. 6 Heat to boiling, stirring constanty. 7 Boil and stir 1 minute. 8 Each sauce make one cup.


    This white sauce can be used in so many different ways. Add Cheese,Curry Powder,Dill,or Horseradish Add canned Tuna,Ham,Hamburger,Sausage. Lots of things can be done with this Roux.

    You're very welcomed - pineapple goes well with ham. I hope you enjoy it. (I would make it now - taste and see if you like it so that you won't have any disappointed guests)

    Welcome Susan. I can sometimes help with low sodium recipes. I got stuck on that diet years ago after a heart attack.
