    Default Super simple baked chicken.

    Disclaimer - Be very careful with my times and temps. I'm using a low wattage toaster oven not a conventional oven. Good points about a toaster oven is that they can be used outside without smelling up or heating up the house. Bad points are most of these things will have the top element on when on the "Bake cycle" just to reach temperature and you have to take temp settings with a deal of doubt. Recipes calling for 350 will need 450 with my toaster oven.

    One chicken, cut up or any number of chicken pieces, skin off.
    No Salt Seasoning
    Enough olive oil to oil the wire rack

    I use a foil lined drip pan on the bottom rack and an oiled wire rack in the middle so the pieces do not have to be turned. Oil the rack and liberally coat each piece with the seasoning. One hour and 15 minutes in my toaster oven wide open (450 degrees).

    The "No Salt Seasoning" I'm using is a product out of Canada from a company called the "Encore Gourmet Food Corp." Quebec. A friend gave me 3 bottles and I have no clue where to buy it but Mama has a Salt Free Seasoning recipe on this forum that will work fine. I've always used a recipe from "Dick Loque's" Low Sodium book but any will do.

    Maybe I've been on a low sodium diet too long but this stuff taste real good to me. I make it several times a week.

    Believe it or not - the chicken/salt or no-salt sub/oil recipe is one of the best ever. simple and delicious. I'm glad you can enjoy it!!
