I recently got a water bath canner to put away some tomatoes from this years garden.
I would love a marinara sauce recipe or any recipes you recommend for canning tomatoes. My husband says if I pricked my finger in the summer I would bleed tomato juice. Love tomatoes so much I eat them with crackers for breakfast when they are in season. My father in law grew low acid tomatoes for me the year I had an ulcer. They were not the same lol. To keep your options open, my recommendation is that you can whole or quartered tomatoes; plain sauce; and plain juice. You can then use those products to make any sauce you want at the appropriate time.

One Of My Favorite Things To Make (italian ) That Goes Well With Any Meal Italian Or Not Is To Take Italian Bread And Slice It Into Diagonal Slices And Then Spread Each Slice With Olive Oil, Sprinkle On Salt, Garlic Powder, Place On A Thin Slice Of Fresh Tomato And Then Top With Freshly Chopped Basil Leaves And Place In Oven Until Hot And Crisp. You Can Sprinkle With Some Cheese And Oregano As Well But I Like Mine Without It.
