    Default Fettuccini Alfredo

    Fettuccini Alfredo

    Heavy Whipping Cream-2 cups.
    Freshly Grated Pecorino Romano Cheese- 2 cups.
    Salted Butter-1 stick.
    Fresh Fettuccini Pasta-1 pound.
    Salt and Pepper -to taste.
    Nutmeg- a dash.

    Place butter in medium size sauce pan. Melt over low flame. Add cream and stir until warmed. Add in half the Pecarino Romano Cheese and stir until dissolved.

    Meanwhile in a large pot bring water to a boil. Salt water slightly and add a tablespoon of olive oil to water to keep pasta from sticking.

    Cook and drain pasta; stir into sauce; salt and pepper to taste.

    Transfer to platter; sprinkle with additional cheese and sprinkle with a dash of nutmeg, if desired.

    I like putting some cream of mushroom in mine, too, just to give it more complexity since Alfredo can be a bit too bland for some people, especially in big batches. But I think that's bordering carbonara already, no?

    My hubby makes a great alfredo.

    I will have to let him have this recipe so he can try it all homemade!
