I made gluten free beer battered fish and onion rings with homemade cocktail sauce ( I used my own homemade ketchup) with a side of roasted broccoli. I don't do fried food that often so when I do my husband and I turn into big hoovers. It was so delicious!

Tonight I hammered a few smokehouse almonds into a fine "dust" then used them in the three-dip breading method for a thin fillet of halibut. After pan-frying it I joined it on a plate with some of my sister's cabbage-raisin slaw, and some chicken/bowtie/spinach caesar salad from a local deli. All was yummy and made my belly happy!

Tonight 2 friends & their kids and I went for Thai food. We enjoyed Thai Iced teas, and shared Pad Thai, Basil Chicken, Cashew Chicken, Ginger Chicken and Pa-Nang Curry... it was ALL YUMMY! Afterwards, we returned to my place and watched a "Iron Man"- then I pulled a hot, bubbly blackberry/nectarine crisp outta the oven and we gobbled it down with vanilla-bean ice cream.

tonight I'm making chicken enchiladas with mole verde that I made from the tomatillos in my garden. This is always a busy month trying to process all my veggies so I will have them for the winter.

It took me a long time to get the hang of making that brown gravy from the sasuage drippings lol. Now I wonder what was so hard about it.

Tonight we are having some friends over after work. I'm serving spinach salad with pomegranate vinaigrette, the beef roast with crimini-red wine sauce I made on Monday on top of pumpkin polenta and for dessert Apple-pecan crumble with vanilla ice cream. I can't wait to eat!
