Default Santa Fe Chicken Tortellini Casserole

1 pkg refrigerated cheese filled tortellini (9oz, you can also use the freeze dried kind, but refrigerated tastes better)
3 tbsp olive or veg oil
2 c broccoli flowerets (I used frozen)
1 onion chopped
1 med red bell pepper chopped
3 tbsp flour
3/4 c milk
3/4 c chicken broth
1 tsp ground cumin
4 c cubed chicken
3/4 c shredded monterey Jack
1/2 c shredded colby
1/2 c crushed tortilla chips

Preheat oven to 350 and spray 3 qt casserole dish w/cooking spray. Cook and drain tortellini (as directed on pkg)

Heat 1 tbsp oil over medium high heat and cook broccoli, onion, and bell for about three minutes stirring freq until crisp tender.

In another skillet, cook flour and 2 tbsp oil over low heat, stirring constantly til smooth. Stir in milk, broth, and cumin. Heat to boiling over medium heat stirring constantly, remove from heat. Stir in chicken, MJ cheese, cooked tortellini, and broccoli mixture. Spoon into casserole dish.

Bake uncovered 30 minutes, then sprinkle with colby cheese and tortilla chips. Bake another 5 minutes.

hey! I was cheking this recipe, actually I think Its a really good one , but I used to make Tortellini whit one recipe that I found this weekend in this website!But I don't know I'm going to try this one this time
