What are some of you cooking techniques for cooking over a campfire? What are some great campfire meals?

Well, we basically have self server, use the bbq forks prongs w/e and cook cook cook.

For fish, we place wire mesh across the top of the fire and place foil on it so the fish dont break up.

Sweet Potatoes are wrapped up in foil around the fire. Takes long time for them to be ready.

A whole a go I had a friend that had a boat and camped a lot on the Potomac River. He had a pontoon boat. We'd make pork chops and sauerkraut on the campfire all the time. It's an easy recipe.

Spread out 2 to 3 layers about 30" long of large width heavy duty aluminum foil.

Place one can or pouch of sauerkraut on top of the foil.

Top with 4 or 6 pork chops, and dump in a can of cheap beer.

Seal the aluminum up and set at the side of a campfire. The pork chops should be on the coals, but not near the flame. Turn over every 30 minutes. Cook for about 2 hours, turning ever half hour.

These are real tender and tasty campfire pork chops.

I usually just cook with a stick. Marshmellows of maybe a hotdog. I've also toasted a banana in the coals with foil around it.

Toasted banana! That's a first for me. How creative!

I love campfire marshmallows...the microwave does a good job in the winter though when I'm cravin 'em and its too snowy for a fire.
