How about a sweet potato pie recipe. I mean a good ole down home recipe lol. My husband likes it alot, but I tried to make one one time. And it was a disaster. My friend told me I should use the canned potatoes instead of the real potatoes because its easier. Thats fine too. I just need a good recipe. thanks.

Sweet Potatoe Pie
INGREDIENTS: 1 pastry-lined pie shell 2 cups cooked, peeled sweet potatoes 4 ounces (1/2 cup) unsalted butter 1/2 cup heavy cream 1/2 cup light brown sugar, packed 2 large eggs, slightly beaten 1 teaspoon vanilla extract 1 teaspoon ground cinnamon 1 teaspoon ground ginger 1/2 teaspoon ground nutmeg dash salt 2 tablespoons brandy, bourbon, or orange juice 1/2 cup dark corn syrup 1 cup pecan halves PREPARATION: Prick bottom of pie crust with a fork; bake in preheated 425° oven for 12 minutes. Set aside. Mash sweet potatoes with half of the butter (1/4 cup). Let cool. Add heavy cream, brown sugar, eggs, vanilla, spices, and brandy, bourbon, or orange juice. Beat until fluffy; turn into pie crust. Bake at 375° for 20 minutes. Combine remaining 1/4 cup butter with corn syrup and pecans; sprinkle evenly over top of pie. Return pie to oven and bake 25 minutes longer, or until a toothpick inserted in center comes out clean. Serve with whipped cream or whipped topping |

SWEET POTATO PIE
1 pkg. (20 oz.) Mrs. Paul's Candied Sweet Potatoes, partially thawed and diced 1 10-inch pie crust, unbaked 1/4 c. butter 1/2 c. sugar 3 eggs Dash salt 1/4 t. ground cloves 1/4 t. ginger 1/4 t. nutmeg 1/2 t. cinnamon 1 c. milk Preheat oven to 350* F. In large bowl cream butter and sugar. Gradually add diced sweet potatoes and blend until smooth. Add eggs, spices and milk to mixture, mixing well. Pour into unbaked pie crust. Bake for approximately 1 - 1 1/4 hours or until knife inserted halfway between center comes out clean. Makes one 10 inch pie. |

OLD FASHIONED SWEET POTATO PIE
2 medium sweet potatoes, sliced 1/2 c. water 1/8 t. cinnamon Two 9-inch pie crusts 1/2 c. sugar 1/2 c. butter 1/8 t. ground cloves Boil potatoes, slice, mash and lay in crust. Combine remaining ingredients and pour over potatoes. Bake at 325* F. for 50 minutes. May substitute vanilla for spices. |

MILL'S SWEET POTATO PIE
1 -10 inch pie shell 2 1/2 c. mashed sweet potatoes 8 T. (1 stick) butter, softened 1 3/4 c. sugar 1 t. ground nutmeg 1 t. vanilla extract 2 large eggs 1 can (7 oz.) evaporated milk Preheat oven to 300* F. Beat sweet potatoes and butter until smooth. Add sugar, nutmeg, and vanilla and continue beating until incorporated. Add eggs, one at a time, beating well after each addition. Add milk slowly, beating continuously. Transfer filling to cool pie shell and smooth top with spoon. Bake until pie is set in center and lightly browned, about 40 minutes. You may have to make a couple different ones to find the one that is best for you! |
