Default Impossible Pie - Coconut Custard Pie

Impossible Pie - Coconut Custard Pie

* 4 eggs
* 1/4 cup margarine
* 1/2 cup flour
* 1 cup sugar
* 1 tsp. vanilla
* 1/4 tsp. salt
* 1/2 tsp. baking powder
* 2 cups whole milk
* 1/2 cup shredded coconut

Note: For a creamier custard, substitute light cream for 1 cup of the milk. Butter may also be substituted for the margarine.
Preheat oven to 350 degrees.

Put all ingredients into blender at once. Blend until mixed thoroughly.

Pour into 9" pie pan and bake 50 minutes.

Note: If using hand mixer, mix at medium-high speed until thoroughly mixed.

I have tried this, my own recipe though, but sooo similar, and it is like MAGIC a BIG WOW factor. Everyone must try it, it is so nice.

Hi Mama,

Quick question- Can I omit the coconut? Will this affect the outcome at all, or do I need to make adjustments? Someone in family can't eat coconut.

Cathy -

I will not eat coconut myself! So I just leave it out of any recipe I am using.
