Default Cider Apple Pie In Cheddar Crust

Cider Apple Pie In Cheddar Crust

Ingredients:
2 c flour, sifted
1 c grated cheddar cheese
1/2 tsp salt
2/3 c Crisco
5-6 Tbsp iced water

6 c sliced apples
1 c apple cider
2/3 c sugar
2 Tbsp cornstarch
2 Tbsp water
1/2 tsp cinnamon
1 Tbsp butter

1 egg yolk
1 Tbsp water

Preparation:
Place flour, cheese and salt in food processor and add Crisco.
Process for 15 secs. Sprinkle water through chute 1 Tbsp at a
time until dough forms (do NOT exceed 20 secs). Shape into a
ball and divide. Roll and press bottom crust into a 9" pie
plate.

Combine apples, cider and sugar in a large saucepan. Cook on
medium-high heat until mixture comes to a boil. Reduce heat to
low and simmer for 5 min. Combine cornstarch, water and
cinnamon and stir into apples. Cook and stir until mixture
comes to a boil. Remove from heat and stir in butter.
Spoon apple mixture into pie crust. Moisten edge of crust with
water. Roll out top crust and place on top of pie. Decorate as
desired. Beat egg yolk and water and brush over top.

Bake at 400 for 35-40 min.
