Default Pork Chops with Rhubarb

Ingredients

1 Tbsp. unsalted butter
1 Tbsp. vegetable oil
6 pork chops, 1 inch thick
2 cups fine breadcrumbs
1/2 cup sugar
1/2 cup brown sugar
3 Tbsps. all purpose flour
1/2 tsp. ground cinnamon
4-1/4 cups rhubarb, thinly sliced



Instructions

Preheat oven to temperature 350°F. Heat butter and oil in a heavy nonstick skillet over medium high heat. Sauté chops until browned on both sides. Add breadcrumbs to skillet to absorb drippings. Combine remaining ingredients and salt and pepper to taste in a bowl. Place half the crumbs in a buttered shallow baking dish. Sprinkle half the rhubarb mixture over crumbs. Place pork chops on top. Then add remaining rhubarb mixture. Cover tightly and bake 40 minutes. Remove cover, top with remaining crumbs and bake 10 minutes more.
