2 Pork Tenderloins, rinsed and patted dry
Salt and Pepper or Calypso Shake* 1 sliced onion Lay pork on baking sheet. Sprinkle with seasoning. Bake at 375 for about 15 minutes. Lay onions atop pork. Bake an additional 15 minutes. Test for doneness--should be pinkish in center, internal temp 150. Remove from oven, slice on the diagonal and drizzle with the peach glaze. For Peach Glaze: Stir on stovetop: 1 c. peach preserves 1/4 c. OJ Calypso Shake Seasoning* to taste *Calypso Shake is a blend of spices made in the Cafe Sole line from Spice Hunter.
