Default Boneless Pork Chops

4 large , Boneless Pork Chops 1 inch thick
2 tablespoon(s) , Olive Oil
1 teaspoon(s) , Kosher Salt
1 teaspoon(s) , Ground Pepper

Build a charcoal fire or preheat a gas grill. Pat the pork chops dry with paper towels. Brush lightly on all sides with olive oil and season with salt and pepper.
Place the chops on the cooking grate, cover, and grill over direct medium heat for 5 to 6 minutes. Turn and continue grilling for another 6 to 7 minutes, until they are cooked to medium. Transfer the chops to a clean platter and let them rest for 5 minutes. Serve hot.
