COUNTRY RIBS AND KRAUT
SERVES 4

2 3/4 lbs. country style pork ribs - each about 1 3/4 inches thick
1 can (14-oz.) sauerkraut
2 c. unsweetened applesauce
2 T. packed brown sugar
1/2 t. garlic powder
1/4 t. caraway seeds


Place ribs in shallow roasting pan meaty side down. Roast 20 minutes in 450* F. oven.
Reduce oven temperature to 250* F. Combine remaining ingredients and arrange over ribs. Ribs are now meaty side up. Cover and bake until meat is tender and done, about 1 3/4 to 2 hours. Baking time may vary.

Ham and Pineapple Dinner
Makes: 4 servings

2 tablespoons butter
2 1/2 cups cooked and cubed ham
2 green onions, chopped
1 cup pineapple chunks, drained
1 1/3 cups pineapple juice
4 teaspoons cider vinegar
2 tablespoons brown sugar
2 teaspoons prepared mustard
2 tablespoons cornstarch

1. Melt the butter in a large skillet over medium heat. Saute the ham, onions and pineapple chunks in the butter for about 5 minutes.

2. In a separate medium bowl, combine the pineapple juice, vinegar, brown sugar, mustard and cornstarch. Stir this together well and pour over the ham mixture in the skillet. Stir well and allow to heat through and thicken, about 5 minutes.

Kielbasa with Peppers and Potatoes

Kielbasa is cooked with red and yellow peppers and potatoes for a delicious, filling meal.


1 tablespoon vegetable oil
1 (16 ounce) package smoked kielbasa sausage, diced
6 medium red potatoes, diced
1 red bell pepper, sliced
1 yellow bell pepper, sliced

1. Heat the oil in a saucepan over medium heat. Place kielbasa and potatoes in the saucepan. Cover, and cook 25 minutes, stirring occasionally, until potatoes are tender.

2. Mix red bell pepper and yellow bell pepper into the saucepan, and continue cooking 5 minutes, until peppers are just tender.

Sesame Pork Strips

1 tablespoon margarine or butter, melted
1 pound pork boneless top loin
1 1/4 cups Bisquick
1/3 cup sesame seed
1 teaspoon salt
1 teaspoon paprika
1 teaspoon ground mustard
2 eggs
2 tablespoons milk
2 tablespoons margarine or butter, melted
Sweet and sour sauce or mustard, if desired


Heat oven to 425 F. Spread 1 tablespoon melted margarine in rectangular pan, 13x9x2 inches. Trim excess fat from pork; cut pork into 1/4-inch slices. Cut slices into strips 1/4 inch wide.

Stir together Bisquick, sesame seed, salt, paprika and mustard. Beat eggs and milk with fork. Dip pork strips into egg mixture; coat with sesame seed mixture. Place pork strips in single layer in pan. Drizzle 2 tablespoons melted margarine over pork.

Bake uncovered 30 to 35 minutes or until brown and crisp. Serve with sauce.
