It's best to prepare this several days before you want to use it, to give the flavors a chance to blend.
3 Lbs Ground Pork 3/4 tsp Red Pepper Flakes 1 Tbl + 1 tsp Salt 2 tsp Black Pepper 1 small Onion 3/8 tsp Thyme 1/8 tsp Coriander 1/4 tsp Fennel 1 tsp Paprika 1 Bay Leaf 2/3 C Sugar 2 1/2 heaping forks of Minced Garlic 1/4 C vegetable oil 2 healthy shakes each of Cumin & Dry Mustard Mix spices & onion in food processor. Process until onion is finely chopped and well mixed with spices. Add sugar & oil. Process until well mixed. Place pork in large bowl. Add spice mixture. Mix thoroughly. Wrap in plastic and store in refrigerator several days before you use. Or, freeze for several days before you use. This is sweet with just a hint of kick. Adjust red pepper flakes to give more heat. I usually package mine in 1 Lb packages and freeze. Excellent in italian dishes. I also use it when making egg rolls. |
