Default Angel Hair Pasta Chicken

Angel Hair Pasta Chicken

2 T olive oil, divided
2 chicken breasts, cubed
12 oz. angel hair pasta
1 carrot, thinly sliced
1 (10 oz. pkg.) frozen broccoli (better with fresh)
2 cloves garlic, minced
2/3 cup chicken broth
1 t. dried basil (better with fresh)
1/4 cup grated parmesan cheese

Heat 1 T oil in medium skillet over medium heat. Add chicken and saute until done. Remove from skillet and drain on paper towels. Bring large pot of lightly salted water to boil. Add pasta and cook until al dente; drain and set aside. While pasta is cooking, heat 2nd T oil over medium heat in same skillet. Stir fry carrots for about 4 minutes, then add broccoli and garlic, and stir fry another 2 minutes. Finally, stir in chicken broth, basil, and cheese, and return chicken to skillet. Reduce heat to low and simmer for about 4 minutes. Place drained pasta in large serving bowl. Top with chicken/veg mixture and serve hot.

My notes: I would add the cheese at the table, as parmesan doesn't exactly melt well and you can end up wtih a mess stuck to the spoon. Also, this can be a bit bland, so you may want to add extra spice. But it's quick and light, especially good for summer.
