I have found this the quickest and easiest way to please people with a chicken.
Preheat oven to 375 (F) 1 medium chicken 1 - 2 1/2 fresh ripe orange(s) 2 tsp sweet paprika 1 tsp rosemary Thoroughly wash and dry the chicken. Slice one orange into medium slices, across the orange wedges. Lift chicken skin from breast carefully. Insert chicken slices between skin and breast. Insert slices getween skin and thigh. If you have an extra orange, you can cut it in half or slice it and place it in cavity. Rub paprika and rosemary on top of breast. Place chicken on roasting tray, preferably with drainage rack, and insert into oven until skin turns crispy brown. Check with meat thermometer. Serve. |
