    Maybe someone here could help me out....

    Could I possibly substitute Rock Cornish Hens for Quail? If not where oh where might I find some Quail to purchase? I live in North Georgia, if that helps.

    Yes, Cathy, you can sub Game Hens for quail. You'll have to adjust cooking times a bit, though, because Game Hens are larger.

    Buying quail is always rough. Some markets (i.e., Fresh Mart) do carry them seasonally, although they are frozen.

    Best bet is to check with a hunt club. Sometimes they make cleaned birds available---although usually just to members. But they're live-bird suppliers sometimes are in the cleaned-bird business as well, and they might share that info with you.

    And, of course, there are on-line suppliers.
