Default Lazy Day Chicken

Lazy Day Chicken

4 boneless chicken breasts
1 cup chopped broccoli, slightly cooked
4 slices provolone cheese
1 can cream of chicken soup (or potato or celery or mushroom)
1/2 cup pecorino romano cheese
1/2 tsp. garlic powder
parsley flakes


Preheat oven to 350 degrees. Pound breasts to even thickness. Divide broccoli among chicken breasts and put one slice of cheese on each breast. Roll chicken breast up and pour undiluted soup over all. Sprinkle with parmesan cheese, garlic and parsley. Cover with foil and bake for 45 - 60 minutes or until done.

Sounds good mama- I enjoy lazy-day dishes too. This time of year when I hate playing with the range, I use the crock pot a lot. Last night I threw some chix thighs and smoked sausage into it, and during the last hour of cooking added a box of Zatarain's Spicy Jambalaya Rice. I like this easy dish and make it a lot- best part is it gives me a second big portion to take in to work to share w/ a co-worker!

Sometimes you just need that extra bit of time for something - and a dish like that is a big help - and you're still getting a good meal.
