Default Chicken and Tofu Recipe

Another nice tofu recipe

1/2 pound boneless skinless chicken breast, sliced thin
1 1/2 tbsp canola oil
2 1/2 tbsp sugar
1/3 cup soy sauce
2 thin slices of fresh ginger
2 tbsp sake
1 medium carrot, cut into thin strips
1 large onion, sliced thin
1 block tofu, cut into 1 inch cubes

Stir-fry the chicken in hot oil. Add sugar, soy sauce, ginger, and sake. Cook for 2 more minutes. Add carrot, green onion and sliced onion. Cook for another minute. Add tofu and cook for 1 minute or until tofu is warmed through. Makes 4 servings. Serve with freshly made hot rice.

I eat tofu all the time; usually just mixed in with a salad. It's a great cholesterol free way to get protein in your diet. I'll have to try this recipe as I have all of those items around right now.
