    Default Chicken Miss Anna-Louise

    Our staff-cook at an Alaskan lodge made this a popular dish w/ the work crew.

    Take a bunch of raw boneless breasts, dip first into seasoned flour- then whisked eggs. Carefully place in a cast iron skillet w/ deep grease in it. Fry until golden on both sides. (The flour-first/egg-second technique produces a different sort of crust)

    Line a baking dish w/ these. Ladle w/ chicken gravy and bake until completely cooked and settled and hot.

    Remove from oven and set on a doubled-over tea towl at the supper table w/ a heaping bowl of buttermilk mashers alongside.

    Hard to beat when ya got a hungry crowd to feed!

    Kevin, I love it. Chicken fried Chicken. Mashed potatoes and gravy. And some really good biscuits. Back off give me some room. My kinda meal. CF
