Oatmeal Raisin Muffins
![]() Here's a healthy breakfast recipe for Oatmeal Raisin Muffins that was provided on the cooking forum by muffinman on July 03, 2006. High in fiber, low in fat and gets it's sweetness from a little brown sugar with natural honey. Note it uses only the egg white to cut out fat and healthy canola oil (a light olive oil ought to work too). So instead of stopping at the dough nut shop on your way to work, make these in the morning. If you start by soaking the oatmeal and raisins in the buttermilk the night before there's only about 20 minutes preparation time in the morning and 20 - 25 minutes to bake. Actual baking time in my oven was 20 minutes. ![]() Fill muffin pan only 1/2 way. ![]() Note muffins are done when they pull from side of pan. |

I looked up Muffinman's recipe for oatmeal raisin muffins and they sound delicious. I will have to give them a try. I usually don't have enough time to make muffins before I go to work so I would have to make them the night before.
How well do the muffins come out if I were to pop them in the microwave for a few seconds to heat them back up? There is nothing like a warm muffin for breakfast. The pictures that were taken of the muffins look so real I could almost reach in and try one. |

aeiou - Let me clarify myself - ANY muffins re-heated in the microwave will have a fresh taste. What I meant was - only reheat what you are going to eat at that time. Re-reheating any muffins several times and after a while and they get yucky. You can bake muffins on Monday and reheat one on Tuesday and reheat another on Wednesday and they will taste good. But if you reheat all your muffins everyday without eating them after reheating - after all those little nukes - they don't taste so good. Sorry if I talked pig-Latin! Sometimes my mouth and mind just don't get it together! LOL
