Default Tortellini Salad

1 lb bag of frozen cheese Tortellini's, cooked
1 red pepper, chopped
1 yellow pepper, chopped
cup of fresh steamed brocolli flowerets (or frozen, but don't over-cook, they shouldn't be mushy)
1/2 chopped red onion
1 small can chick peas
1 small can sliced black olives
1/2 lb sliced pepperoni
1 large bottle Italian dressing (I like a Zesty dressing)

Toss all in a bowl and refrigerate a few hours, stirring a couple of times to distribute flavors. Serve cold.

Mmmm...I'll bet this would be good with creamy italian or ceasar dressing, as well.

Dried tortellini could be substituted, I'm sure. I find the dried, stuffed tortelli cook up amazingly well.
