Default Red potato Salad

2 1/2 lbs. mini red potatoes (I used 3 big) cut into small pieces with peels
1 bunch scallions - chopped - greens only
1 cup black olives - cut into quarters (I used green olives, You could also use sour pickles.)
3/4 cup water
1/2 teaspoon salt
Over low heat cook potatoes in water with salt for 15 minutes or until done. (all water will absorb) Combine scallions, olives, parsley and potatoes.

You can use mayonnaise (as needed) or dressing. I use mayonnaise, since it's easier.

Dressing:
3 T. vinegar
1/3 cup oil
1 teaspoon mustard
dash of black pepper
1 teaspoon salt
Mix all ingredients for dressing. Pour over salad.If mayonnaise is used, add mayonnaise and mix.

Could be used as a warm side dish, or as a chilled potato salad.
