Feta Walnut Spinach Salad with Basil Dressing
1 bunch spinach, torn
1 small avacodo, sliced 1/2 med red onion 4 ounces crumbled feta cheese 1/2 cup walnuts, chopped and toasted Dressing 1/2 cup olive oil 1/4 cup balsamic vinegar 1 tablespoon dried basil 2 teaspoons sugar 2 large cloves garlic, minced 1/2 teaspoon salt 1/2 teaspoon pepper Mix all salad ingredients together. Dressing: Bled all ingredients together in a blender or food processor. Toss salad and dressing together. Serves 6-8
