Here's a different sort of salad that we have occasionally. A nice change from lettuce, tomato, and cucumber.
Salad:
2 heads Romaine lettuce
2 red onions
2 oranges
1 cup chopped black olives
white pepper
Dressing:
2 tbsp red wine vinegar
2 tbsp dry sherry
1/2 cup olive oil
Wash and dry two heads of Romaine lettuce. Tear or cut into pieces and place in a salad bowl. Slice 2 red onions very thinly and place on top of the lettuce. Add sections from the oranges, and 1 cup chopped black olives. Season with white pepper to taste. Then mix the dressing ingredients together, and pour over top. Toss to mix the dressing with the lettuce.
