Feta Cheese and Tomato Salad
6 medium tomatoes, cut into wedges 1 1/2 cups crumbled feta cheese 1/4-1/2 cup chopped green onions 3 tablespoons olive oil 2 cloves garlic, minced 1 teaspoon dried oregano or 1 tablespoon fresh Salt/Black Pepper/Garlic Powder mixture - season to taste Boston lettuce leaves In a large bowl, combine the tomatoes, cheese, onions, oil, garlic and oregano. Toss gently and refrigerate at least two hours. At serving time, season to taste. Spoon salad onto bed of lettuce leaves.
