    Default Three Easy Summer Salads I Enjoy...

    1.) I like to make a large "White Tie" Ceasar Salad and fortify by adding cooked, chilled bow-tie pasta and grilled chicken breast and split grape tomatoes.

    2.) Love shrimp-fennel salad: toss together chilled poached shrimp (poached in fruity white zinfandel) julienne of red onion and red bell pepper, lotsa chopped fresh fennel (bulb and fronds) and a dressing of mayo, honey and lime juice.

    3.) Also blackberry wild-rice salad: 1-1/2 c. leftover chilled wild rice blend, 1-1/2 c. cooked chilled barley, chopped green onion, chopped parsley, 2 c. fresh blackberries, toss w/ orange marmalade/dijon mustard vinaigrette.
