    Default Tuna Pasta Primavera Salad

    Ingredients:

    2 C cooked and chilled small shell pasta
    1 1/2 C halved cherry or grape tomatoes
    1/2 C thinly sliced carrots
    1/2 C sliced celery
    1/2 C chopped seeded and peeled cucumber
    1/2 C thinly sliced radishes
    1/2 C thawed frozen petti-peas
    1/4 C red bell pepper
    2 tbls. minced green onion, including tops
    1 can Albacore or chunk light tuna
    1 C salad dressing of choice
    Bibb or red leaf lettuce
    Fresh herbs for garnish


    Directions:

    In large bowl, combine all ingredients except lettuce and herbs. Chill several hours. If using oil and vinegar-style dressing, stir salad mixture occasionally to evenly marinate ingredients. Place lettuce leaves on each salad plate and spoon salad over lettuce. Garnish with fresh herbs if desired. As well, I have discovered that the inclusion of red-onion rings enhances both the look and the taste of this combination salad.

    This is such an attractive and colorful salad and crunchy-delicious!
