Default Bolognese Sauce

Bolognese Sauce

2 tablespoons olive oil
1 onion, chopped
2 cloves garlic, minced
1 stalk celery, diced
1 carrot, diced
1 pound ground beef
3 cups fresh tomatoes, peeled and chopped
1 teaspoon basil
1 teaspoon oregano
1 teaspoon parsley
2 bay leaves
Salt and pepper
1 can (13 oz.) tomato paste
1/2 cup beef stock
1/2 cup red wine


Directions:

Heat oil in a large pot. Add onion, garlic, celery and carrot. Cook for 5 minutes.

Add ground beef and cook until browned. Drain off excess fat.

Add remaining ingredients. Bring to a boil and simmer, uncovered, for 1 hour.

Remove from heat, remove bay leaves. Serve with pasta, or cool and freeze.

I never had this before. Sounds like a spaghetti sauce / stew combination. Celery is one of my favorite tastes so I think I'd enjoy this. Is this a thick sauce like spaghetti or more like a tomato sauce?

This is a thicker sauce - it's great with spaghetti!

Sounds like it would be great with spaghetti. I never added wine to spaghetti sauce before, and this sound interesting. The next time I think Italian, I'm going to try this out.
