Default Classic Homemade Mayonnaise Recipe

There's no need to buy jars of mayonnaise at the store as it's simple to make. Plus if you make your own mayonnaise from scratch you can use more heart healthy oils than the large manufacturers use. Surely you can find olive oil and canola oil mayonnaise in specialty sections of grocery stores or health food stores but often you're just paying for the packaging. Keep that old mayonnaise jar, and use this recipe to make your own.

Classic Mayonnaise
2 egg yolks
1 tsp Dijon mustard
1 tbsp wine vinegar
1/4 tsp white pepper
1 1/2 cups light olive oil or canola oil

In a large ceramic bowl, combine the egg yolks, mustard, 1/2 the vinegar, and white pepper. Mix together with a wire whip. Then add the oil very slowly, whipping vigorously and continuously until all of the oil has been added. If the finished mayonnaise is too thick, beat in the remaining vinegar.

Recipe makes about 2 cups of mayonnaise. Place in a clean empty mayonnaise jar, and refrigerate before using. Always store in a refrigerator.
